This recipe comes to us from the Polynesian Cookery section. Basically these are smoked pork chops roasted with a slice of pineapple on top. I’m thinking grilling could be a nice choice as well. We added strips of green pepper just for fun and another color.
I’m not sure we’ve had smoked pork chops before, but saw them at the butcher’s in West Saint Paul and wanted to try them. Simple, but satisfying. We served them with rice and a vegetable.
