I have always wanted to make candied violets – I admit to a streak of Victorian sensibilities. This year I decided to try it – partly because I needed to pick the violets before today’s snow.
So how did it work out? Sadly, this was not the year for a candied violet triumph. I think I cooked my syrup too long, and couldn’t figure out how to get the violets coated without all the little petals folding up. I ended up with a candied mess. On the other hand, I think I’m well on my way to having the technique down for pralines!
In cooking, as in life, if you’re not failing once in a while, you’re not taking enough risks.
